Country Thyme Plaice Serves 4
Ingredients:
- 4 170g (6oz) plaice fillets, defrosted, skinned
- 30g (1oz) butter or margarine
- dash of lemon juice
- Filling:
- 30-55g (1-2oz) long grain rice
- 30g (1oz) butter or margarine
- 1 small onion, sliced
- 2 rashers bacon, sliced
- 115g (4oz) mushrooms, sliced
- 55g (2oz) sweetcorn kernels
- 0.5 5ml spoon (half a teasp) dried thyme
- salt and freshly milled black pepper
Method
- Preheat oven to 190°C/375°F, Gas Mark 5
- For the filling: cook the rice in salted, boiling water, drain.
- Melt the butter, fry onion, bacon and mushrooms until soft. Stir in rice, sweetcorn, thyme and seasoning.
- Spread the filling over the skinned side of the fillet and fold over.
- Place fish in an ovenproof dish dot with butter or margarine and sprinkle with lemon juice, placing any left over filling around fish.
- Cover and bake for 20 minutes. Serve with salad.
