Country Thyme Plaice Serves 4

  • Ingredients:

  • 4 170g (6oz) plaice fillets, defrosted, skinned
  • 30g (1oz) butter or margarine
  • dash of lemon juice
  • Filling:
  • 30-55g (1-2oz) long grain rice
  • 30g (1oz) butter or margarine
  • 1 small onion, sliced
  • 2 rashers bacon, sliced
  • 115g (4oz) mushrooms, sliced
  • 55g (2oz) sweetcorn kernels
  • 0.5 5ml spoon (half a teasp) dried thyme
  • salt and freshly milled black pepper


  1. Preheat oven to 190°C/375°F, Gas Mark 5
  2. For the filling: cook the rice in salted, boiling water, drain.
  3. Melt the butter, fry onion, bacon and mushrooms until soft.  Stir in rice, sweetcorn, thyme and seasoning.
  4. Spread the filling over the skinned side of the fillet and fold over.
  5. Place fish in an ovenproof dish dot with butter or margarine and sprinkle with lemon juice, placing any left over filling around fish.
  6. Cover and bake for 20 minutes.  Serve with salad.
