Skate Wings
Not actually a fillet or loin so you may wonder why Skate is in this section. Where else should it go? Well, Skate is like nothing else so should really have its own section! We love this fish, often our stock levels appear incorrect as we can't help taking some home for ourselves! The best way to cook it is with black butter and capers, simply divine. We recommend you consume within 2 days once defrosted as it has a tendency to deteriorate quickly.
