Gurnard
Gurnard was once used as Lobster bait but since Rick Stein championed this under-rated fish it has become a minor celebrity, similar in taste and texture to Red Mullet. We love this fish too, with it's large beady eyes and striking red tinted colour. The French certainly know what to do with it and so should we.
