Sweet and Spicy Fish Skewers Makes 6 skewers
Ingredients:
- 12 mackerel fillets, defrosted
- For the spicy marinade:
- 1 5ml spoon (1 teasp) olive oil
- 1 small onion, finely chopped
- 2-3 5ml spoon (2-3 teasp) prepared Cajun spices
- 1 15ml spoon (1 tbsp) tomato puree
- 4 15ml spoon (4 tbsp) red or white wine
- For the sweet marinade:
- grated rind & juice 1 lemon
- 2 15ml spoon (2 tbsp) sherry
- 1 15ml spoon (1 tbsp) brown sugar
- 1 15ml spoon (1 tbsp) fresh chopped chives
Method
- Pre-heat grill or barbecue
- To make the spicy marinade, heat the oil in a small pan and cook the onion until soft, stir in the spices and tomato puree then add the wine. Leave to cool.
- To make the sweet marinade, blend all the ingredients together.
- Cut the herring or mackerel fillets into 5cm (2") pieces. Thread onto skewers and divide between two shallow dishes.
- Pour over the prepared marinades, cover and leave to marinate in a cool place.
- Cook over a prepared barbecue or under a hot grill for about 10 minutes, turning frequently and basting with any remaining marinade.
