Delicious Smoked Eel with Horseraddish & Rocket Light lunch for 4

  • Ingredients:

  • 225g (8oz) Hot Smoked Eel
  • 4 slices wholemeal bread (with crust on)
  • 50g (2oz) rocket and watercress
  • salt and freshly milled black pepper
  • 6 tbsp mayonnaise
  • 2 tbsp horseradish sauce or cream

  • Remove any bones or skin from the eel and break up a little.
  • Mix the mayonnaise with the horseradish and seasoning.
  • Set a cast griddle pan over a high heat and grill the slices of bread until lightly browned.
  • To serve, first place the toasted bread into the middle of each plate, then the rocket, then the smoked eel and finally the mayonnaise and horseradish dressing on top....DELICIOUS!
