Delicious Smoked Eel with Horseraddish & Rocket Light lunch for 4
Ingredients:
- 225g (8oz) Hot Smoked Eel
- 4 slices wholemeal bread (with crust on)
- 50g (2oz) rocket and watercress
- salt and freshly milled black pepper
- 6 tbsp mayonnaise
- 2 tbsp horseradish sauce or cream
- Remove any bones or skin from the eel and break up a little.
- Mix the mayonnaise with the horseradish and seasoning.
- Set a cast griddle pan over a high heat and grill the slices of bread until lightly browned.
- To serve, first place the toasted bread into the middle of each plate, then the rocket, then the smoked eel and finally the mayonnaise and horseradish dressing on top....DELICIOUS!
