Prawn, Melon and Mango Salad Serves 4

  • Ingredients:

  • 340g (12oz) tiger prawns, defrosted
  • 1 240g pack prepared melon cubes, drained
  • 1 mango, peeled and diced
  • rind and juice of 1 lime
  • 5 15ml spoon (5 tbsp) mayonnaise
  • salt and freshly milled black pepper
  • fresh chopped mint, to garnish

 Method

  1. Place all the ingredients (except the mint) into a large bowl and mix.
  2. Garnish with the mint and serve with crusty French bread.
