Prawn, Melon and Mango Salad Serves 4
- 340g (12oz) tiger prawns, defrosted
- 1 240g pack prepared melon cubes, drained
- 1 mango, peeled and diced
- rind and juice of 1 lime
- 5 15ml spoon (5 tbsp) mayonnaise
- salt and freshly milled black pepper
- fresh chopped mint, to garnish
- Place all the ingredients (except the mint) into a large bowl and mix.
- Garnish with the mint and serve with crusty French bread.
