Hot Mackerel Spuds Serves 1

Method

  1. Preheat the oven to 200°C/400°F, Gas Mark 6
    or
    Microwave Power: 800 Watt
  2. Prick potato, wrap in foil and bake for approximately 1 hour, or until soft.  Alternatively, prick potato and cook in a microwave on HIGH for 4 minutes – 4 minutes 30 seconds.
  3. Mix together the mackerel, coleslaw and cucumber.
  4. Cut the potato in half crosswise and top each half with the mackerel mixture.
  5. Bake for a further 5-10 minutes until hot or cook in a microwave on HIGH for 30 seconds.  Serve with a mixed salad.
