Hot Crab Starter Serves 2

  • Ingredients:

  • 215g (8oz) mixed crabmeat, defrosted
  • 1 large avocado
  • lemon juice
  • 115g (4oz) low fat cream cheese
  • 1 5ml spoon (1 teasp) tomato puree
  • few drops Tabasco sauce
  • salt and freshly milled black pepper
  • 2 slices proscuitto (Palma) ham

Method

  1. Preheat oven to 190°C/375°F, Gas Mark 5
  2. Half the avocado and remove stone.
  3. Scoop out the centres and place the skins to one side.
  4. Chop avocado and sprinkle with lemon juice.
  5. Add remaining ingredients, except the ham, and mix well.
  6. Fill avocado shells and top each with a scrunched slice of ham.
  7. Bake for 10 minutes or until crab mixture is hot and ham is crisp.
