Hot Crab Starter Serves 2
Ingredients:
- 215g (8oz) mixed crabmeat, defrosted
- 1 large avocado
- lemon juice
- 115g (4oz) low fat cream cheese
- 1 5ml spoon (1 teasp) tomato puree
- few drops Tabasco sauce
- salt and freshly milled black pepper
- 2 slices proscuitto (Palma) ham
Method
- Preheat oven to 190°C/375°F, Gas Mark 5
- Half the avocado and remove stone.
- Scoop out the centres and place the skins to one side.
- Chop avocado and sprinkle with lemon juice.
- Add remaining ingredients, except the ham, and mix well.
- Fill avocado shells and top each with a scrunched slice of ham.
- Bake for 10 minutes or until crab mixture is hot and ham is crisp.
