Fish ‘n’ Rice Serves 8 baby portions

  • Ingredients:

  • 170g (6oz) cod fillets, defrosted, skinned and cubed
  • 30g (1oz) unsalted butter
  • 1 shallot, finely chopped
  • 115g (4oz) easy cook long grain rice
  • 425ml (15fl oz) boiling water
  • 55g (2oz) frozen peas
  • 2 tomatoes, skinned, deseeded and chopped
  • 1 5ml spoon (1 teasp) fresh chopped parsley, to garnish

Method

  1. Microwave Power: 800 Watt
  2. Place the fish in a suitable dish, cover and cook on HIGH for 2 minutes. Carefully flake the fish, checking for bones.  Cover and refrigerate until required.
  3. Place the butter and shallot into a suitable bowl, cover and cook on HIGH for 1 minute.  Stir in the rice until coated in butter.
  4. Pour in boiling water.  Cover (leaving a small vent) and cook on HIGH for 10 minutes, stirring halfway through.
  5. Add remaining ingredients.  Cover and cook on HIGH for 5 minutes.  Gently stir through the fish, cover and cook on HIGH for a further 2 minutes or until all the liquid is absorbed and the rice is soft.
  6. Garnish and serve.
