Cod Cocktail Serves 4
Ingredients:
- 340g (12oz) cod fillets, defrosted, skinned and cubed
- 515ml spn (5 tbsp) mayonnaise
- 1 15ml spn (1 tbsp) tomato puree
- 1 15ml spn (1 tbsp) sherry
- 1/2 5ml spn (half a teasp) sugar
- dash Worcestershire sauce
- dash lime juice
- salt and freshly milled black pepper
- 115g (4oz) mixed lettuce leaves
- paprika, to garnish
Method
- Microwave Power: 800 Watt
- Poach the fish in 300ml (10 fl oz) water for 5-6 minutes or place in a suitable dish with 1-2 x 15ml spoon (1-2 tablespoons) water, cover and cook on HIGH for 2-3 minutes. Drain the fish and allow to cool. Chill in a refrigerator until required.
- Mix together the mayonnaise, tomato puree, sherry, sugar, Worcestershire sauce and lime juice, season with salt and black pepper.
- Line individual dishes with the lettuce; add the fish and spoon over the cocktail sauce. Garnish with paprika.
- Serve with bread as a starter.
