Bream with Herb Oil Main course for 2
Ingredients:
- 2 sea bream fillets, cut in half
- 2 tbsp olive oil
- 1 lemon, juiced
- For the salsa:
- 1 onion, diced
- 1 red pepper, de-seeded and diced
- 3 plum tomatoes, diced
- 2 tbsp olive oil
- 1 lime, juice only
- 30g (1oz) fresh coriander, chopped
- salt and freshly milled black pepper
- For the herb oil:
- 60g (2oz) fresh basil
- 60g (2oz) fresh coriander
- 60g (2oz) fresh flat leaf parsley
- 3 tbsp olive oil

Preheat a large frying pan and add two tablespoons of olive oil. Add the sea bream and fry for 3-4 minutes on each side.

While the fish is frying, prepare the salsa. Put all the salsa ingredients in a small bowl and stir to combine.

Prepare the herb oil by placing the fresh herbs and oil in a food processor. Blend to form a pesto-like sauce, taking care not to make the sauce too smooth.

Back to the sea bream, add the lemon juice before removing the pan from the heat.

Place the fish on a plate. Add a spoon of salsa and drizzle over the herb oil before serving.

Great served with freshly boiled new potatoes bashed and drizzled with olive oil.
